I have always loved loved loved Greek salad . . . it has been one of my favourite salads to quickly whip up, and enjoy! It goes great with so many things – chicken, meat, fish, pasta . . . really anything! I have been trying to be a little more health conscious lately, and am trying to cut out dairy, and possibly meat! I know, hard right? It’s what I’ve grown up with – meat, cheese, veggies and pasta . . . an Italian girls dream! LOL! Oh and don’t forget the bread 😉
So I decided to make a Greek salad the other day and just eliminate the Feta cheese, because I wanted to try making it a true Vegan Greek salad! And success!!!! Below is the recipe . . .
2 tomatoes, half a cucumber, 1/2 green bell pepper, 1/4 red onion, olives, pinch of salt, 1 tablespoon of olive oil, 1 tablespoon red wine vinegar, and a bit of dried oregano . . . mix all the ingredients together and enjoy!
I have heard that you can buy Vegan Tofu Feta cheese, and that is next on my list to try! It would definitely add back the Feta flavour I absolutely love!!!
